The overwhelming majority of criminal cases never reach trial for a variety of reasons. Is there being "more than enough evidence" a good reason?

Unless u been through our so called justice system u will never understand it. U see once u been arrested your guilty and its lets make a deal on time you get. Sure u can wait on a trial over a year away.while sitting in jail or sign for time and be out

Are you sure you got that saying right? If the have more than enough evidence, it sounds like a slam dunk trial to me. And if the party is guilty, they may  want to work out a plea deal to save time and money. Both the courts and their own.

Probably one of the better ones. 

If the evidence is overwhelming, defendants often take a plea deal rather than roll the dice with a jury trial.  That saves the state time and money; takes the defendant off the street, and saves the victims from reliving what happened to them and their families.

What if the evidence is fake or the investigators think a bunch of witnesses is sufficient evidence?

The law does not do total justice. The prosecution represents the state; the defense represents the defendant. Each acts in its side's best interest. They have already taken what you commented on into account when they make their recommendations take into account the probably outcome given what information they have available to them.
