I have noticed light brown sugar is sweeter then dark brown sugar. Does anyone know why?

They're both a mixture of sugar and molasses.  The dark brown has a higher ratio of molasses and a more intense flavor.  In light brown, you taste the sugar more.  They can be used interchangeably, according to your preference in each recipe.

It's a wonderful glaze for carrots and sweet potatoes. I like the molasses flavor in lots of baked goods. It's also fun too add to a cup of coffee with cream. :)
