As a kid I loved a cheese sandwich with Fritos. I would add the Fritos to the sandwich for a nice crunch.
Homemade lunchables. Cut up meat, cubes of cheese, crackers, fruit. I usually have two different kinds of everything and I'd put it on a huge platter and we'd eat family style.
Tostadas made with fritos instead of a tortillas.
Mac and cheese
Pita bread. Let the kids stuff the pockets with lettuce, cheese, veggies, lunch meat. They usually like creating their own sandwiches.
Bag salad with a quick cooking of a cut up, breast of chicken . . . Probably looking at 15 minutes tops.
Pretty easy lunch!
